Honey Lemon Glazed Roasted Chicken

1 22 ounce hen
1 pot of brine: water, salt, pepper, sugar, lemons, and garlic
We put the hen in the brine for about 4 hours and then we marinaded it with lemon. We preheated the oven at 375 degrees. We placed the hen in the oven and cooked it for 15 minutes, then we flipped it over and cooked the other side for another 10. We then started adding the honey as a glaze towards the end, so the hen wouldn’t burn. Mmmm.. it was super good. Nicole placed the hen on the cutting board and let it rest for 10 minutes so the hen would retain all of the juice. We also made a simple salad of lettuce and just chopped up salami (for sandwiches). The vinegrette was made of store bought vinegrette, mustard, and honey. It was a really great light meal.
The great thing about the meal was that…the hen only cost $2 at Hawaii Supermarket. I got it on sale at the time. =)
